Today is Yumday! Protein Breakfast Recipe Share

breakfast burritoIf you want to add more protein to your breakfast I’ve got some yummy recipes to share with you.

banana bread protein pancakes Banana Bread Protein Pancakes (from Peanut Butter Fingers)

Serves one

  • Prep Time: 5 minutes
  • Cook Time: 5 minutes


  • 1/2 cup old fashioned oats
  • 1/2 banana, mashed
  • 1/4 cup cottage cheese
  • 1 egg
  • 1/2 teaspoon cinnamon


    1. Spray pan with cooking spray and heat to a medium heat
    2. Combine all ingredients in a small bowl and blend with an immersion blender until batter is relatively smooth and all ingredients are fully mixed
    3. Pour batter onto the warm pan to form four medium-sized pancakes
    4. Allow to cook until edges start to harden, about three minutes
    5. Flip pancakes and allow to cook until batter is no longer runny, about two more minutes
    6. Top with syrup, pumpkin pie spice and banana slices and enjoy.

Breakfast Burrito

Give your morning a punch of protein by adding beans. Fill a tortilla with scrambled eggs, onions, tomatoes, and black beans for 25 grams of protein! Add pico de gallo or a sprinkle of cheese if you want more flavor. You could also eat this over greens. I like to add in avocado.

**Make a batch of these and freeze them. Heat them up in your toaster oven or microwave in the am for a quick breakfast.

*You can sub an English muffin or whatever just please look at the ingredients! Keep your bread clean if you are going to eat it.

Avocado and Hard-Boiled Eggs

2 hard-boiled eggs (how to hard boil eggs)
1/2 avocado, diced
1 teaspoon fresh herbs, optional
Dash of hot sauce, optional

DIRECTIONSPeel your hard-boiled eggs and run under cold water. Transfer to a cutting board, and slice into quarters

Combine your chopped eggs with the diced avocado in a small bowl or mug. Top off with garnishes of your choice, and enjoy.

A quick snack idea:

Cottage Cheese and Fruit

 Cottage cheese is packed with protein, just 4 ounces yields 14 grams! This also makes a great mid-day snack when you need an energy boost or have a sweet craving. Mix in your favorite berries or melon.
