Dessert. I said it. I ate it. I survived and didn’t break any “rules” regarding New Year’s healthy eating resolutions. It was goooood. Even Archer loved it and said it was like ice cream. Drooling yet? Good thing it only takes about 5 minutes to make!
Healthy, Yummy Chocolate Mousse (Dairy-Free). Makes about 4-5 servings
2-3 tablespoons cocoa powder
1/4 teaspoon vanilla extract
Chill your can of full-fat coconut milk for a few hours in the refriderator or overnight. When you are ready to make the mousse, open up the can and scoop the thick coconut cream into a large bowl (try to keep as much liquid out of the cream as possible)*. Add the rest of the ingredients to the bowl and beat the mixture for 2-5 minutes. Eat right away or chill it. Mousse will become thicker as it chills in the fridge but it will lighten up again if you re-beat it (optional) before serving.
*You can use the left over liquid to add into smoothies or pour over granola or fruit.
