Looking to cut back on pasta without cutting back on pasta? You just bought a Veggetti, didn’t you?Veggetti, Spiralizer, or the hard-core thing I use called the Beriner Cook Help Vegetable Slicer (see pic below). These wonderful kitchen tools provide you with easy ways to create noodles out of vegetables like Zucchini (Zoodles), Sweet Potatoes (Swoodles), Rutabaga (Rutaboodles), Carrots, squashes, potatoes, cucumbers, beets, kohlrabi, Jicama, etc. I am really into rutabaga right now. I don’t know why, either… These tools make great pasta alternatives for traditional Italian dishes but also things like pad thai and baked fries. There are loads of recipes out there and even youtube video tutorials.
Sample Recipe: Swoodles
Take 1-2 Spiralized Sweet potatoes and lightly boil the “swoodles” to desired consistency. Add in a Protein like shrimp if you like. Add in other veggies if you like. Cover in sauce. For a healthy pesto sauce place the following ingredients in a food processor or blender and serve.
For pesto sauce:
- 3-4 large handfuls fresh spinach
- 1-2 heavy-handed pours olive oil
- 2-3 cloves garlic
- 1 handful almonds
- 1 handful parmesan
- juice of half a lemon
- tablespoon dried basil
- tablespoon dried parsley
- salt and pepper to taste
