Deep – Dish Polenta Pizza

This is a great low carb alternative to regular pizza.

I made the polenta pizza this way:

I sprayed the glass pie pan with zero calorie cooking spray.

Made the polenta as recipe calls.

Instead of stirring in parm, I stirred in a little pepper, garlic powder and onion powder.

I craved tomato sauce so I cut up a plum tomato and put it in the food processor. I spread the tomato over the polenta to create a very thin, light sauce type substance. I topped it with mushrooms, basil and cilantro. I sprinkled just a bit of parm on top.

I baked it at 425 for 25 minutes. Perfection. The original recipe states the serving size is 4 but my version has a little less calories so you could probably have a third.

*FYI. I made the polenta ahead of time, spread it into the pan, covered it and put it in the fridge.
